About Starks Gold Honey

A Taste of Nature’s Symphony

At Starks Gold Honey, we believe that the finest flavors come from harmony—between land, pollinators, and people. Nestled in the heart of New Jersey’s South Mountain Reservation, our apiary is surrounded by a rich mosaic of wild flora. Each day, our bees embark on gentle journeys through black locust groves, linden trees, poplar stands, Japanese knotweed thickets, and vibrant wildflower meadows. What they return with is more than nectar—it’s a reflection of the land’s soul.

Our honey is not mass-produced. It’s handcrafted by nature and harvested with care. The light floral notes of black locust, the refreshing citrusy hints of linden, the earthy depth of poplar, and the rich maltiness of Japanese knotweed blend into a golden elixir that changes with the seasons. Every jar tells a story—of biodiversity, sustainability, and the quiet magic of bees at work.

We’re proud to offer a product that’s as local as it is luxurious. No additives. No shortcuts. Just pure, raw honey that honors the rhythms of nature and the resilience of our pollinators.

Starks Gold Honey is more than sweet—it’s a symphony of the wild.

A Regenerative Partnership with Nature

Our bees are more than honey-makers—they’re vital pollinators that help sustain the biodiversity of the South Mountain Reservation.

This diverse forage creates a honey that’s more than sweet—it’s a reflection of the land. Light and floral notes from black locust blend with the refreshing citrusy hints of linden. Poplar adds depth with its earthy undertones, while Japanese knotweed contributes a rich, malty character. Wildflowers bring seasonal surprises, making every jar a unique expression of the region’s biodiversity.

Local, Raw, and Unfiltered

By keeping our honey raw and unfiltered, we preserve the natural enzymes, pollen, and flavor complexity that only wild-foraged honey can offer. This also reduces energy use and processing waste, keeping our environmental footprint light.
