This diverse forage creates a honey that’s more than sweet—it’s a reflection of the land. Light and floral notes from black locust blend with the refreshing citrusy hints of linden. Poplar adds depth with its earthy undertones, while Japanese bamboo contributes a rich, malty character. Our bees are more than honey-makers—they’re vital pollinators that help sustain the biodiversity of the South Mountain Reservation. By allowing them to forage freely across native and invasive plant species, we support the natural regeneration of local flora while helping to control aggressive species like Japanese knotweed through pollination without propagation.
